"Our greatest commitment is to enhance the character of each individual vineyard", he begins Andrea Ciappi, a young winemaker and owner of the farm together with the family Casa alle Vacche by #sangimignano. In this happy corner of Tuscany wine has been made for generations, and today Andrea's greatest commitment is to innovate but without distorting the family wine tradition, made up of passion and particular attention to the territory.
"To deal with and contain the damage caused by late frosts, in recent years we have begun to do late pruning, this allows us to delay the vegetative period of the plant and prevent damage from frost."
With Andrea we visit The Macchioni, the old farm vineyard from which the homonymous selection is born - "In this vineyard the harvest is always late, in fact we wait for the optimal ripening period of the grapes" - the I Macchioni selection is in fact characterized by its large floral bouquet and intense color.
Casa alle Vacche produces a wide range of both white and red wines, many single-variety and a surprising Sangiovese vinified in white with an unexpected character.

Visiting the company of Andrea and his family was a great pleasure for me, in fact I consider them one of the many wineries in San Gimignano that know how to do research both in winemaking techniques but above all in the vineyard, from that side every spark to give birth a great wine.
