Tuscany is a unique and beautiful region, in every corner it is possible to discover and visit places of great charm steeped in millenary culture. Like Impruneta, where the first kilns for working clay were found already in medieval times from which authentic terracotta masterpieces are still born today.
On these hills surrounding Florence, I was able to visit and discover the Relais Villa Olmo, a Hotel with exclusive apartments, a refined restaurant and a swimming pool with a splendid view of the Impruneta countryside.
We can define it as a Country Hotel, where we take care of ourselves, but at the same time we can be captivated by the many excellences present on the territory ofImpruneta and Chianti, where the visitor's imagination is constantly teased by dozens of initiatives.
The Relais has 18 elegant units (villas with private pools, suites and rooms) that offer hospitality of the highest level and perfect solutions for all needs, great attention also to the surrounding nature. Inside the Relais there is also a generous vegetable garden, where theExecutive Chef Alessio Leporatti daily captures the freshest raw material for his dishes.
Immediately a visit to the cellar, where they give the grapes from the farm estates composed of 15 hectares, the production recalls the principles of the territory and quality, with a careful selection in all stages of winemaking. In the amphorae of the cellar is also vinified theImprunetis, an extraordinary red IGT of Sangiovese grapes only, the terracotta amphora allows indirect micro-oxygenation, similar to the barrique, avoiding excess reduction during maturation, but prevents the tertiary transfer of the barrique.
Il Diadema Wine Bar & Restaurant it is a delightful and welcoming place full of charm, where it is possible to taste truly refined preparations but at the same time with a typical Tuscan character. Dishes that are born thanks to a careful choice of raw materials, a cuisine that honors the delights of this corner of Tuscany, preferring small producers who are a bit of the historical memory of the territory. A modern reinterpretation of traditional dishes in a culinary journey that fully meets all that is familiar and genuine to us.
The vegetable garden in summer: a selection of both cooked and raw seasonal vegetables, each with a different preparation, in order to keep each flavor intact, in combination with a pleasant Diadema - Damare Rosè 2019.
Risotto with octopus, burrata, hazelnut and pigmenton: a dish with a unique and original character, which winks at Spain, with a particular and unusual taste, combined with a fresh Diadema - Damare Bianco 2019.
Peposo dell'Impruneta of veal cheek with Chianti aromas with cannellini beans in flask: a dish that we can find on the menu all year round, enriched by the aroma of black pepper, sage and thyme. In combination with an exquisite Diadema - Inprunetis 2016.
The tasting ends with a pleasant Tobacco ice cream with rum chocolate, fresh mint, candied lime and coffee pod.
