Lawyer by profession, from Thursday to Sunday he dedicates his time to his greatest passion: wine and country life. In his Subbiano produces, among others, this IGT Poggiotondo, Sangiovese with a small percentage of Canaiolo, 16 days of maceration on the skins with light punching down, ages in concrete tanks and then aged for 18 months in the bottle.

The vineyards of Poggiotondo, all with the Chianti denomination, have an area of ​​4,20 hectares, are planted on marl soil and trained with spurred cordon.

Intense ruby ​​red with garnet reflections, rich and elegant nose of undergrowth: blackberry, blueberries, but also lively balsamic notes. A fresh and composed sip at times austere, despite its age the fruit is still crunchy, the tannin instead is pleasantly relaxed.

  • PAIRINGS:

I consider it a decidedly gastronomic wine, it can be paired well with dishes of our Mediterranean cuisine, even spicy ones, my advice is to try it with a good cheese aged at least 24 months.
